Classic Homemade Chicken Noodle Soup Recipe

Ingredients:


  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 3 medium carrots, sliced

  • 3 celery stalks, chopped

  • 3 garlic cloves, minced

  • 8 cups chicken broth

  • 2 cups cooked, shredded chicken

  • 2 tsp fresh thyme (or 1 tsp dried)

  • 1 tsp fresh rosemary, chopped (or ½ tsp dried)

  • 1 bay leaf

  • Salt and pepper to taste

  • 2 cups egg noodles

  • 2 tbsp fresh parsley, chopped


Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking until softened (about 5 minutes). Stir in garlic and cook for 1 more minute.

  2. Pour in chicken broth and bring to a simmer. Add chicken, thyme, rosemary, bay leaf, salt, and pepper. Let simmer for 10 minutes to meld flavors.

  3. Add egg noodles and cook until tender (about 8-10 minutes).

  4. Remove bay leaf and stir in fresh parsley. Taste and adjust seasoning if needed.

  5. Ladle into bowls and serve with crusty bread or crackers for a perfect winter meal.
